So I brewed my Thiol Libre beer over the weekend. I decided to keep it simple - I didn’t want a hop bomb that overwhelms whatever thiol contributions may occur. The 5oz mash hop really did gum up my mash, but with a little patience it all went okay. Four days in, and it looks like it’s nearly fermented out already! Anyway, here’s my recipe:

Apparently new data suggests to avoid North American Pilsner malt to avoid off phenolics
That is fascinating! I wouldn’t have thought that Pilsner vs pale North American malts would have much different phenolic precursors.
I used some Maris Otter from Fawcett, and I am pleased with the result. There is a guy on the Nano forum who mentioned that he did not get good results. It could be the culprit He used Golden Promise and some Red Wheat malt.
I didn’t use Pilsner malt, just Pale, Aromatic, Honey, and a bit of Chit. Fermented at 21-22 and ended up with a phenolic mess! It was like a juicy saison, and not in a good way. The beer has since mellowed down, and isn’t so bad, but I’m still disappointed. I’m currently fermenting a 2nd batch, low and slow this time, hoping to avoid the phenols. We’ll see how it goes!

Hi everyone (first post ),
I’m planning to brew an Experimental NEIPA with Thiol Libre next week.
I’ll use Marris Otter (55%) as base malt from Fawcett, flaked oats (20%), Vienna malt (5%), Wheat Malt (4.2%), Wheat Flaked (3%), maltodextrin (3%) and finally malted oats 1.6%). A bit complicated but I’m trying to use some leftovers.
Planning to use Calypso, Citra and Cascade as recommend by Escarpment Labs for their level in thiol precursors.
I’m planning to ferment at 20C for 10 days roughly.
OG: 1.075 and FG: 1.016 with a 80% attenuation (though the range given by Escarpment Lab is 68-80%).
Thoughts? I must say I’m very curious of the result .
Looks good to me. Why not adding some hops in the mash as well as suggested by Escarpment?
For now I want to go with a “safe” recipe (never mashed hopped before). But I might give it a try next time!

Je m’attendais à mieux dans mon cas.
J’ai brassé une NEIPA et elle est… dégeulasse.
J’ai pris du pilsner tel qu’indiquer de ne pas faire, et mon congelo à brisé, alors la fermentation était à 22 degC (target 17 degC). La bière goute le gaz/caoutchou. Un peu moins pire après une semaine, mais si ce ne serait pas de mon partner qui bois n’importe quoi, elle aurait fini dans le drain.

Ma NEIPA (recette ici) a donné une très bonne bière. Je me suis permis de mettre une généreuse quantité de houblon à l’empâtage et j’ai fermenté à assez basse température (15°C) pour les premiers jours puis j’ai remonté la température à 19°C. Il n’y avait pas de mauvais goût dans la mienne.
Mais j’avoue que je m’attendais à quelque chose avec plus de “oumf” et je ne crois pas que je ferai des pieds et des mains pour en racheter pour ma prochaine NEIPA.
