Hi, up to a third fill in that barrel, it shouldn’t be such an issue concerning ‘contamination’. But bacteria from the wood can always be present. From what I’ve seen, 2-3 fills can be ok ‘without’ so much acidity from barrel bacteria (but can totally be present from that fill on though…). Getting to the fourth fill (I hope we’ll get to try this with this barrel), THEN we can expect some acidity from barrel bacteria. I’m anxiously waiting to brew a Bourbon-Barrel Saison with sour cherries from my own trees and see how it turns out (fourth fill)!

Ne faut pas oublier que vieillir dans un tonneau de 5L est très différent que le faire dans un tonneau de 50L.
Je me souviens d’une compagnie qui vendait du whiskey et qui offrait un baril de 5L pour vieillir ton whiskey. Selon eux, un vieillissement de 6 mois était comparable à un vieillissement d’environ 5 ans pour un whiskey dans un tonneau de 50L. C’est une question de % de surface vis-à-vis le volume total.
Mais je suis bien d’accord que vous seriez mieux avec une bière plus foncée et élévée en alc genre Old Ale, Barleywine ou Wee Heavy.
J’arrive de Chicago où j’ai eu le plaisir de gouter des spécialités chez Goose Island appelé Bourbon County Stout. C’était hallucinant!

Oui la grosseur du tonneau est très importante pour la durée de vieillissement ainsi que le goût apporté, j’en conviens très bien. Mon intervention était plus sur mon expérience personnelle de barrique, ce qui explique ma suggestion de Old Ale pour le 3e passage en baril du club!

Wee heavy à mon expérience so far, en baril, amène un peu trop d’acidité au style. Je veux pas sonner tannant, étant trop nouveau dans le groupe lol. Perso, je crois que LE style pour une bière en baril, sera tjrs un Impérial Stout (le vannilé et coconut du baril sont tjrs tellement extraordinaires!!!). Mais le close-second Choice est vraiment une Old Ale à mon avis hehe. Mais sérieusement, un Barrel project c’est vraiment excitant brew-wise! À quand le choix du style?

Peut être que ma Wee Heavy en baril de Bourbon Barrel vieillie un an n’est pas parfaite j’avoue lol!
