Favourite yeasts

So on the puff girl today, we were talking about a lot of brewing stuff, but particularly I recall conversation with yeast and it kind of made me think what yeasts are your Favourite yeast for each type of care you do for example my favourite yeast for a Grisette is belle saison

I have not been brewing for a long time, but I’ve enjoyed the Wyeast 3068 - Weihenstephan yeast. I’ve brewed about 3 beers off the same package of yeast that I just re-harvest after the brew. I’ll probably use it 1 or 2 more times before starting again with a fresh package.

SafLager W‑34/70 and US-05 are the other goto’s, I have not played around much with the others yet.. but am interested in trying out some Belgian doubles in the near future.

WB-06 for Belgian and German wheat beers

K-97 works well in a lot of styles

Escarpment House Ale Dry (as an alternative to S04 which I have bad experiences with in stalling out)

Mangrove Jack M41 for Belgians

I predominantly use dry yeast and have recently started using 2 Sachets in some styles especially lagers where I mostly use 34/70

I tend to ferment in the middle of the manufacturer suggested temperature range with the exception of saisons which I ferment at the warm end of the suggested range and lagers at the lower end.

Other yeasts I like include K97, WB-06, and voss for NEIPAs. In the past I used US-05 a lot but have switched to trying different types every time. There are getting to be more options all the time.

Rarely do I use harvested yeast though I often collect a jar from my fermenter. I have dumped wort on top of a yeast cake before as well but I make sure to oxygenate if I’m not taking yeast from a sachet.
