As for the hop lemonade, it’s inspired by the “Rhubarbblonade” that Norm posted last year. This time I skipped the rhubarb, let’s see how it goes. But for a 20L batch, the short of it is:
- 2.72kg lemons, squeezed
- 50g dried hibiscus
- 43g Mosaic
- 43g Centennial
- 1 pack Safale US-05
Bring 21L water to a boil, add lemon juice. At flameout, add hibiscus. Cool to 90C, whirlpool the hops. Chill, transfer to closed fermenter, pitch yeast, seal and CO2 purge headspace. Wait 3 days and transfer to serving keg. That’s it! I’m going to sweeten it with honey at serving time, I don’t want to put any additional sugar in there with yeast still floating around. If you try, let me know. You can play around with the hops, I’m sure there are better combinations but I just have a lot of Centennial and Mosaic on my hands.
