1 vs 2 dry hops

Bonjour à tous,

Est-ce que vous trouvez qu’il y a une grosse différence entre une bière qui reçoit un seul dry hop au high krausen versus une bière dont les houblons sont séparés high krausen + quelques jours plus tard?

Au niveau des risques d’oxydation, je me dis qu’un seul dry hop est plus prudent, mais si la différence est flagrante, je serais prêt à prendre le risque.

Maudite bonne question. D’ailleurs, je me la pose également. J’aime brasser des NEIPA et je faisais toujours 2 dry hop mais je trouve que le 2e dry hop reactive la fermentation pour au moins une autre semaine. J’ai donc commencé à faire un seul dry hop, jour 3 ou 4. Mais à vrai dire, j’ai jamais fait un comparatif un vs deux dry hop de façon rigoureuse. Par contre, Brulosophy a deja fait des tests en ce sens:

I’ve also had hop-creep problems with late dry hop additions twice recently. Fermentation restarted and beer finished at 1.004 - quite a bit stronger and dryer than expected!

A dry beer is not something I like when brewing a NEIPA, so that’s a very good point!

Maybe that’s something that would help for a Brut IPA though!

À Kahnawake Brewing, nous avons abandonné les dry-Hops au high krausen honnêtement. Nous préférons plutôt un gros dry-hop vers le fin du fermentation pour avoir une chance de récupérer de la levure.

Thanks for the comment Drew! What does « towards the end of fermentation » mean? Do you have a rule of thumb, let’s say x points before estimated FG, x% attenuation or a specific number of days?

Je fais un dry hop après 3 jours, pour 3 jours.
Et le second, en keg, pour 3 jours. Avec le keg sous pression, j’ose croire que le risque d’oxydation est moindre. Je me souviens pu trop s’il y a une grosse différence entre 1 dry hop et deux.

I heard of breweries using some sort of rule of thumb but we don’t really have one. Usually it happens that we are about 2-3 Plato from terminal. We make sure the hops really get in contact with the beer by recirculating with a pump the next morning. We always give it an extra few days to a week to ferment out the last bit and clean up the hop creep.

On a side note, I put a door bell by the door so people can come get beer on days we are closed. I forgot to put up my sign though lol
